It’s a pudding! It’s a casserole! It’s sweet! It’s savory! It’s many things to many people, but above all—it’s delicious. We’re talking noodle kugel here, a.k.a. lokshen noodle if you dabble in Yiddish.
Our noodle kugel recipe is sweet and cinnamon-cozy. Sweet noodle kugel often has cottage cheese, and some early Jewish cookbooks list this version as a kugel meant only for the harvest holiday Shavuot—a holiday featuring several dairy foods. Of course, it’s a dish that’s delish any time for anyone. B'tayavon!

Preheat oven to 375 degrees and grease a 9x13-inch baking dish with butter. Fill a large pot with salted water and bring to boil over high heat. Cook egg noodles according to package directions, about 7 minutes. Drain. Return egg noodles to pot and toss in 1 tablespoon melted butter.
Whisk eggs and sugar together in a large bowl until sugar dissolves. Whisk in cottage cheese, sour cream, vanilla and cinnamon until combined. Pour in remaining melted butter and whisk together until combined. Add cooked noodles and toss to coat.
Pour egg noodle mixture in an even layer into the prepared baking dish. Bake until the center is set and the top is golden-brown, about 50-55 minutes. Let cool at room temperature for about 10-15 minutes. Slice and serve.
Note:
Stir in 1 cup of raisins with the noodles in step 2 for added sweetness and texture!
